Cranberry Oatmeal Muffins

Ingredients
  • Cranberry Oatmeal Muffins:
  • 1 ½ cups Flour
  • 1/2 cup oats
  • 1/2 cup packed brown sugar
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup fresh or partially thawed frozen cranberries or other fruit
  • 2 eggs
  • 1/2 cup buttermilk
  • 1/2 cup butter, melted
  • Dutch Crust:
  • 1/4 cup butter, softened
  • 1/4 cup packed brown sugar
  • 1/4 cup each oats & flour
  • 1 teaspoon cinnamon
Directions

Prepare Dutch Crust by mixing all crust ingredients together until crumbly; set aside.

In large bowl, mix flour, oats, sugar, baking powder and baking soda. Add fruit; stir to coat.

In a small bowl, beat eggs with fork; beat in buttermilk and butter. Add to flour mixture; stir until just blended. Fill greased muffin tins 2/3 full; top with Dutch Crust. Bake in preheated 400 degree F oven for 15-20 minutes, or until toothpick inserted in center comes out clean.
