Preheat oven to 350 degrees.
Combine beef, pork, veal, celery, onion, bread crumbs, parsley, basil egg salt and pepper in a large mixing bowl until mixture just comes together. Do not over mix.
Line a baking sheet with aluminum foil or parchment paper and turn the meatloaf mixture onto the foil. Shape into a loaf and cover with the peppered bacon slices.
Bake for approximately 90 minutes or until meatloaf reaches an internal temperature of 170 degrees.
