Salsa Fresca

Time: 10 | Serves: 32
Ingredients
  • 1 can tomatoes
  • 1 whole fresh tomato—quartered
  • 2 whole jalapeño peppers—seeded and sliced
  • 1 whole fresh specialty pepper—optional
  • 3 whole green chiles
  • 1 whole red onion—quartered
  • 1 clove fresh garlic—minced
  • 1/2 whole lime—juiced
  • 4 1/2 sprigs fresh cilantro
  • 1 splash olive oil
  • 1 pinch salt and white pepper
  • 1 pinch cumin—optional
  • 1 teaspoon oregano, fresh—chopped
Directions

Drain canned tomatoes (reserve juice). Coarsely dice: fresh tomato, red onion, peppers and green chilies.

Combine all ingredients in a food processor. Process to desired consistency.
