Cranberry Oatmeal Muffins


Cranberry Oatmeal Muffins:
1 1/2 cups all-purpose flour
1/2 cup oats
1/2 cup packed brown sugar
2 teaspoon baking powder
1 teaspoon baking soda
1 cup fresh or partially thawed frozen cranberries or other fruit
2 eggs
1/2 cup buttermilk
1/2 cup butter, melted

Dutch Crust:
1/4 cup butter, softened
1/4 cup packed brown sugar
1/4 cup each oats & flour
1 teaspoon cinnamon


Prepare Dutch Crust by mixing all crust ingredients together until crumbly; set aside. In large bowl, mix flour, oats, sugar, baking powder and baking soda. Add fruit; stir to coat. In a small bowl, beat eggs with fork; beat in buttermilk and butter. Add to flour mixture; stir until just blended.

Fill greased muffin tins 2/3 full; top with Dutch Crust. Bake in preheated 400 degree F oven for 15-20 minutes, or until toothpick inserted in center comes out clean.
