Easy Meatloaf



1 pound ground beef
1/2 pound ground pork
1/2 pound ground veal
1/2 cup celery, finely chopped
1/2 cup onion, finely chopped
1/2 cup bread crumbs
1/2 cup chopped parsley
1 Tablespoon dried basil
1 egg
1 1/2 teaspoon salt
1/2 teaspoon black pepper
6 slices bacon


Preheat oven to 350 degrees F.

Combine beef, pork, veal, celery, onion, bread crumbs, parsley, basil egg salt and pepper in a large mixing bowl until mixture just comes together. Do not over mix.

Line a baking sheet with aluminum foil or parchment paper and turn the meatloaf mixture onto the foil. Shape into a loaf and cover with the peppered bacon slices. Bake for approximately 90 minutes or until meatloaf reaches an internal temperature of 170 degrees F.
