Egg Strata with Ciabatta Crust

Nothing will warm your mid-morning guests like this yummy breakfast strata. We like adding fresh vegetables for extra flavor. Pick and choose your favorites, like zucchini, peppers, mushrooms or asparagus.



6 eggs
1/2 pound sausage
2 cups milk
1 cup cheddar cheese
1 teaspoon dry mustard
1/2 teaspoon salt
4 slices torn potato bread or cubed butter
1 ciabatta loaf


The night before: Crumble and brown sausage. Drain off grease and set to the side. In a large bowl, beat eggs and milk together. Add dry mustard and salt and combine. Add cheese, cubed or torn potato bread and sausage.

Butter bottom of baking dish. Slice ciabatta loaf into 1/4 inch slices. Butter one side of each slice and line the baking dish, overlapping slices to make a scalloped pattern with crusts. Pour in egg mixture. Cover and keep in the fridge over night.

The next day: Uncover. Bake at 325 degrees F for 45 minutes to an hour. Strata is done when eggs are golden on top and seem solid when shifted.
