Green Chile Cornbread



1 cup milk
1/4 cup butter
1 egg
1 1/4 cups yellow cornmeal
1 cup all purpose flour
1/3 cup sugar
1 Tablespoon baking powder
1/2 teaspoon salt
1/2 cup roasted green chile, deveined, seeded and chopped in small pieces


Heat oven to 400 degrees F. Spray two 8x8" baking pans, with cooking spray. In a large bowl, whisk milk, butter, egg. Stir in cornmeal, flour, sugar, baking powder, and salt until all ingredients are well combined. Fold in roasted green chile pieces. Pour into an 8"x8" baking pan. Bake 25 minutes or until golden or until toothpick inserted comes out clean. Remove from oven, let cool and slice into 12 pieces.
