Mac & Cheese Bites with Bacon

Ingredients

1/2 pound macaroni pasta
4 ounces thick-cut bacon
1 cup panko bread crumbs
3 Tablespoons butter
3 Tablespoons all-purpose flour
1/2 teaspoon grated nutmeg
3 1/2 cups milk
1 shallot chopped
12 oz. sharp white cheddar
Salt and pepper to taste

Directions
  1. Preheat the oven to 350F.
  2. Cook the pasta al dente in boiling salted water as directed on the package. Drain the pasta and set aside.
  3. While the pasta cooks, cut the bacon into 1/4 inch pieces, sauté in a small pan until crisp. Remove the bacon from the pan and drain on paper towels. Pour all but 2 tablespoons of the drippings; add the breadcrumbs to the drippings and on low heat toss to coat evenly. Season with salt and pepper, and set the pan aside.
  4. In a saucepan, melt the butter over medium-low heat. Add the flour, nutmeg and stir with a wooden spoon to work the dry ingredients into the butter. Continue to cook for 3 minutes, stirring often. Whisk in the milk in 1/2 cup increments, making sure to work the mixture until it is smooth each time. Whisk in the shallots, and simmer the mixture for about 10 minutes, stirring often.
  5. Turn off the heat and whisk in 3/4 of the grated cheese. Season the cheese sauce with salt and pepper.
  6. Stir in the macaroni and bacon, scoop into greased mini muffin tin and top with the remaining cheese.
  7. Sprinkle the breadcrumbs over each mac and cheese muffin and bake uncovered for 45 minutes, or until the cheese and breadcrumbs are golden.

Let cool for 10-15 minutes so muffins can hold their shape. Run a knife around the edge and carefully remove from the muffin tin, serve on Chinet® Classic White Square Dessert Plates.
