1 1/2 c. uncooked macaroni
2 T. butter
2 T. flour
1 c. milk
1 1/2 c. sharp cheddar cheese
Salt and pepper to taste
Sliced cucumber for serving
Bring a pot of water to boil. Pour in the cup of macaroni and cook until tender.
Transfer the macaroni to a colander to drain and rinse, then set aside. Melt the butter in the pan and slowly add flour, stirring often.
Cook on low heat for about 2 minutes stirring constantly to make a roux. Gradually pour milk into the mixture, whisking until smooth.
Cook for another 2 minutes, until you've reached the desired consistency. Add in the shredded cheddar cheese and stir until it's melted and smooth.
Stir in the drained macaroni into the sauce until the pasta is fully coated. Add salt and pepper to taste.
