Mulled Pineapple Cider is a favorite toasty cocktail during the winter months. The pineapple conjures up visions of tropical beach vacations and the spices and coziness warm you up! Pineapples are well stocked at the grocery store during the winter and bring a little sunshine into the home on a cold day. A small cup of this cider goes a long way. It's rich, spicy, and has a perfect consistency.
1 tablespoon cinnamon
1 teaspoon whole cloves
1/2 teaspoon allspice
2 cups chopped pineapple
4 cups pineapple juice
1/4 cup brown sugar
4 oz. dark spiced rum
4 oz. Apple Jack liquor
Place the cinnamon, cloves, and allspice in a medium pot on low heat and stir until fragrant. Add in the pineapple juice, pineapple chunks, and brown sugar and bring to a simmer for 15 minutes.
Pour in the spiced rum and Apple Jack and simmer for another few minutes.
On top of a bowl, place cheesecloth over a strainer and pour in the cider to remove pineapple chunks and spices.
You can strain twice for a very smooth cider. Enjoy!
