Perfectly Grilled Burger with Chipotle Aioli

A moist, juicy burger deserves all the limelight, and the best way to accentuate it is with an elevated, restaurant-quality sauce: a good ol’ aioli. The tangy and garlicky aioli pairs perfectly with hot patty fresh off the grill.

Ingredients

Burger Ingredients  

  • 1 ½ lbs. ground chuck 
  • 2 tsp. Worcestershire sauce 
  • 1 tsp. onion powder 
  • ½ tsp. garlic powder 
  • 1 tbsp. ketchup 
  • 1 tsp. salt 
  • ½ tsp. pepper 
  • 4 ice cubes 

Chipotle Aioli Ingredients  

  • 1 egg yolk  
  • 1 canned chipotle in adobo, minced 
  • 1 tsp. chipotle sauce from canned chipotles in adobo 
  • ¼ cup & 3 tbsp. oil 
  • ¼ tsp. garlic powder 
  • 2 tsp. fresh lime juice 
  • 1 tsp. kosher salt 
  • ½ tsp. pepper 
Directions

Chipotle aioli

  1. Whisk egg yolk, garlic powder, and lime juice together in a bowl.  
  2. Add the oil a few drops at a time, whisking constantly, until completely combined. The emulsified egg yolk and oil should be a thick, creamy consistency.  
  3. Stir in the minced chipotles and chipotle sauce, then season with salt and pepper to taste.  
  4. If aioli seems too thick, stir in a drop or two of water until it is thinned to your liking. 
  5. Pour into a sealable jar or container with a lid. Refrigerate until ready to use.  

Burger

  1. Preheat the grill to high heat.  
  2. Combine ground chuck, Worcestershire sauce, onion powder, garlic powder, ketchup, salt and pepper in a large bowl and mix until just combined. 
  3. Divide the beef mixture into four equal portions and form them into balls. Gently place one ice cube in the middle of each ball. Flatten the balls into patties that are about 3/4” thick and gently press down in the center of each patty to form a slight depression.    


     
  4. Oil the grill grates. Place the patties on the grill grates Grill the burgers for 3-4 minutes until nicely browned on the bottom side.  



     
  5. While the second side is grilling, toast the buns on a cooler section of the grill. Spread chipotle aioli onto the toasted top buns

Odds are you have a tray of ice cubes in your freezer — if so, say goodbye to dry, rock-hard patties with this easy grilling hack. Simply add a cube of ice directly to your burger as you grill it to lock in moisture. You’ll be blown away by juicy, mouthwatering burgers 

If you don’t have any eggs on hand, don’t fret. Mayonnaise can be used as a substitute for an equally [Text Wrapping Break] 

If using mayonnaise, combine all of the chipotle aioli ingredients in a bowl, except for salt and pepper. Whisk the ingredients until well combined. Taste, and season with salt and pepper to your liking. Cover the bowl and place in the refrigerator until ready to use.
