Salsa Fresca


1 can tomatoes
1 whole fresh tomato—quartered
2 whole jalapeño peppers—seeded and sliced
1 whole fresh specialty pepper—optional
3 whole green chiles
1 whole red onion—quartered
1 clove fresh garlic—minced
1/2 whole lime—juiced
4 1/2 sprigs fresh cilantro
1 splash olive oil
1 pinch salt and white pepper
1 pinch cumin—optional
1 teaspoon oregano, fresh—chopped


Drain canned tomatoes (reserve juice). Coarsely dice: fresh tomato, red onion, peppers and green chilies. Combine all ingredients in a food processor. Process to desired consistency.
