2 medium sweet potatoes
6 large marshmallows, sliced
20 pecan halves
Preheat the oven to 400 degrees. Peel the sweet potatoes and cut into 1/2-inch slices. Place on a baking sheet covered with aluminum foil.
Lightly drizzle olive oil over the sweet potatoes, along with a sprinkle of salt and pepper. Toss together and make sure the potatoes are evenly covered. Bake for 10 minutes and remove.
Turn over the sweet potato slices and bake for another 10 minutes. Then, top each sweet potato piece with a sliced marshmallow.
Broil on high for 15-seconds, or until the marshmallows are golden.
Once the marshmallows have softened, immediately remove from the oven and top with the pecan halves.
