2 large sweet potatoes, partially cooked and peeled
8 Tablespoons (1 stick) butter, melted
1 cup honey roasted peanuts, chopped
These are as fun to make as they are to eat. We love the touch of peanut. And because they're baked, not fried, they not only taste better than store-bought, they're healthier. Kids will have a blast making them.
Preheat oven to 450°F. Line large baking sheets with foil and lightly grease. Slice potatoes 1/4-inch thick. Dip potatoes in melted butter and arrange on baking sheet so the chips do not overlap. Sprinkle with peanuts. Bake for 15 to 20 minutes. Sprinkle with salt. Serves 2-3
