Combine vinegar and brown sugar in a small sauce pan over medium heat. Bring to a boil, stirring constantly, until sugar is dissolved. Reduce the heat to low and simmer for about 15 minutes until the glaze is reduced by half. Let it cool. Then, toss the cubed watermelon, chopped mint and feta cheese together in a large bowl. Drizzle the cool balsamic glaze over the watermelon mixture right before serving.
