Blackberry Lavender Cocktail

Lavender adds sophistication to this refreshing summer cocktail. Recipe below is for two cocktails, but can be multiplied if serving from a pitcher. 


1/3 cup lavender simple syrup (recipe below)

10-12 fresh blackberries

6-8 fresh mint leaves

Juice from 1 lime

¼ c tequila or vodka (optional)

Ice cubes

Sparkling water

Lavender Simple Syrup:

1/2 c water

1/2 c granulated sugar

1 tbsp dried lavender


For the Simple Syrup:

Combine ingredients in a small saucepan and bring to a boil over medium-high heat. Once sugar melts, reduce the heat to medium and let syrup cook until slightly reduced. Remove from heat, strain to remove lavender, and let cool.

For the cocktails:

Divide the simple syrup, blackberries, mint leaves, and lime juice between two glasses. Muddle the ingredients together to release the juices of the blackberries and mint. Add in tequila or vodka if using. Add 3-4 ice cubes to each glass and top with sparkling water. Mix well and enjoy.
