Crispy Okra

This gluten-free and vegan okra recipe is both tasty and traditional to the Diwali holiday. Okra is not only mild in flavor—making it extremely versatile—it is also packed with nutrients. Load it with spices and fry it to crispy perfection.

Ingredients
  • 1 pound okra
  • ½ teaspoon turmeric
  • 1 teaspoon red chili powder
  • 1 teaspoon ground coriander
  • 1 teaspoon cumin 
  • 1 teaspoon garam masala 
  • 1 teaspoon amchur powder
  • 1 teaspoon chaat masala
  • ½ cup gram flour (besan)
  • salt, as desired
  • 10 tablespoons oil
Directions
  1. Rinse and dry okra. 
  2. Chop or slice okra, as desired.
  3. Sprinkle all the spices one by one on the okra and mix.
  4. Add the besan on the okra and mix until evenly coated.
  5. Let the mixture sit for 30-60 minutes.
  6. Add 2-3 tablespoons oil to pan.
  7. Fry a small batch of okra at a time until golden brown and crispy.
  8. Set fried okra aside on a paper towel and fry remaining batches.
