This traditional Reuben is piled with layers of melty Swiss and Gouda cheese for the ultimate cheesy Reuben sandwich!

    Mix the Russian dressing ingredients together in a medium bowl and stir until well combined. Set aside.

    Note: Our Russian dressing recipe makes exactly enough for four Reuben grilled cheese sandwiches, but you can double the recipe if you’d like extra sauce for dipping. A traditional Reuben sandwich uses Russian dressing, but if you are not a fan of horseradish, simply omit it from the recipe to make a 1000 Island dressing instead! Store-bought 1000 Island dressing works great with this recipe!

    Set a large, non-stick pan over medium heat. Spread about two teaspoons of mayonnaise (or softened butter) across the surface of one slice of bread. Place the bread, mayonnaise-side down, into the hot pan and sprinkle ¼ cup shredded Gouda cheese over the surface of the bread.

    Note: Marbled rye is ideal to make this a true Reuben sandwich, but any thick slices of bread will work.

    Top the shredded cheese with ¼ cup sauerkraut, followed by three ounces of sliced corned beef.

    Drizzle two tablespoons of Russian dressing over the corned beef, then top the beef with two slices of Swiss cheese.

    Spread two teaspoons of mayonnaise (or softened butter) over the surface of another slice of bread. Place this slice, mayonnaise-side up, on top of the Swiss cheese.

    Cook the sandwich for 2-3 minutes until the Gouda cheese is melted and the bottom slice of bread is crispy and browned. Carefully flip the sandwich over and cook for another 2-3 minutes until the Swiss cheese is melted and the bottom slice of bread is also browned and crispy.

    Repeat with remaining ingredients to make four total sandwiches.
