    Cook the sushi rice according to the package instructions.

    Put the rice wine vinegar and sugar in a microwave-safe bowl and microwave on a high level for about 30 seconds.

    Transfer the cooked rice to a large bowl. Add the rice wine vinegar mixture to the rice and stir the rice until it is fully coated. Let the rice cool.

    Place one nori sheet shiny side down on a sushi mat.

    Place ¾ cup of sushi rice on the nori and pat down with wetted fingers (if you’re using half nori sheets, then use half this amount of rice). Leave a 2-cm strip at the short end.

    Arrange your chosen ingredients over the center of the sushi and, using the sushi mat, roll the sushi up. It’s important to keep the roll as tight as possible.

    Cut each roll into individual sushi pieces.
