    Whisk the flour, sugar, baking powder, cocoa powder, and salt together in a large bowl. Set aside.

    In a separate medium bowl, whisk the melted butter, vanilla, apple cider vinegar, and buttermilk together until combined. Whisk in the eggs until fully combined, then whisk in red food coloring.

    Pour the wet ingredients into the bowl of dry ingredients. Whisk until combined but be mindful not to overmix. The batter will be a little lumpy!

    Turn on waffle maker and spray with baking spray, according to waffle maker’s instructions. When the waffle maker is ready, spoon in the required amount of waffle batter and cook according to waffle maker’s instructions. (Quantity of batter will vary based upon the waffle maker size.)

    Cook waffles for 3-4 minutes until crispy on the outside, then transfer to a platter and tent with foil to keep warm.

    Repeat with remaining waffle batter.

    In a medium mixing bowl, whisk the whipped cream cheese, powdered sugar, milk, maple syrup, and vanilla together until smooth and creamy. (For a thinner glaze, add more milk, [one tablespoon at a time], until it reaches your desired consistency.)
