Vegan Mac and Cheese

Vegan Mac and Cheese with no vegan cheese sounds too good to be true, right? This creamy, dairy-free macaroni and cheese is baked and topped with crispy breadcrumbs. 

  • 1/2 cup vegan butter
  • 6 Tbsp. all-purpose flour
  • 3 14-oz. cans coconut milk 
  • 1 cup vegetable stock
  • 3 Tbsp. Dijon mustard
  • 1 cup nutritional yeast
  • 3 tsp onion powder
  • 3 tsp garlic powder
  • 1 and 1/2 tsp. smoked Paprika
  • 1 and 1/2 tsp. salt
  • 1 and 1/2 tsp. ground black pepper
  • 18 oz. elbow macaroni
  • 3 thick slices white bread, toasted
  • 2 Tbsp. vegan butter, melted
  1. Preheat the oven to 400°F.
  2. Melt butter in a pan. 
  3. Whisk in the all-purpose flour.
  4. Pour in coconut milk and the vegetable stock. Use a hand whisk to whisk out the lumps. Whisk until sauce boils and thickens. 
  5. Remove sauce from heat and whisk in Dijon mustard, nutritional yeast, onion powder, garlic powder, smoked paprika, salt and pepper. 
  6. Cook macaroni according to the package directions then rinse and drain.
  7. Add the cooked macaroni into the pot of sauce.
  8. Transfer the macaroni and sauce to a 9×13 baking dish.
  9. Prepare the crumb topping by blending bread in blender until you have crumbs. Transfer to a mixing bowl and mix in melted vegan butter. 
  10. Place the breadcrumbs evenly over the top of the macaroni.
  11. Bake for 20 minutes until the topping is golden brown and crispy.
