Healthy Summer Cookout Salad Cups

Summer is upon us, which means cookout season is finally here! Whether it’s a small or large group, I love to call a bunch of friends, grab some delicious food, and throw a fun, outdoor get-together while we let the kids run wild in the backyard.

And trust me, I can eat traditional cookout food all day long (seriously – give me all the burgers and potato chips!). However, recently I’ve been trying to make healthier choices.

One of my favorite foods is a good chopped salad. I REALLY love everything to be chopped up into perfect, tiny bite-size pieces. So how nice are these portable and healthy cookout salad cups?

Chinet® Cut Crystal® 14 oz. cups make this simple side dish beautiful and elegant on a cookout table. No one has to juggle plates, salad tongs, dressing bottles, or clumsily scoop chopped salad off a plate. Simply grab a cup and walk around the party enjoying your delicious (and nutritious!) salad.

Any salad would work perfectly in these cookout cups, but I put all my favorite things into mine, and it was so yummy!

To make this salad, toss the following ingredients together in a large bowl:
-       3 hearts of romaine lettuce, chopped
-       Cherry tomatoes, halved or quartered
-       1 red onion, chopped
-       10 slices of bacon, cooked and chopped
-       ½ lb. elbow macaroni noodles, cooked according to package instructions and cooled
-       Shredded Parmesan

I tried this salad with both a honey Dijon dressing and ranch, and ranch won (shocker!). It’s hard to beat ranch dressing at a cookout!

Depending on the crowd you are hosting, you could either dress the salad in the large bowl so that it is ready to eat, or put a few dressing options out for people to dress their own salad cups.

Divide the salad into Chinet Cut Crystal 14 oz. cups and stick a Chinet Cut Crystal fork in each one. I topped each salad cup with a little more shredded Parmesan for a nice presentation.

A simple way to elevate water at a cookout is to add crushed ice and fresh fruit to Chinet Cut Crystal stemless wineglasses. I often forget how delicious water is when it’s been infused with fruit. My kids can’t get enough fruit water when I put it out at a party. I added chopped strawberries and blueberries to mine, but ANY fruit combination works wonderfully and adds an unexpected surprise to your cookout.

Any good backyard BBQ needs plenty of napkins to clean up the fun. I like to display Chinet® Classic White™ All Occasion napkins and easy-to-grab cutlery in a cute utensil caddy. It makes for a nice presentation and keeps everything from blowing away.

At this summer cookout I served tortilla chips, spinach and artichoke dip, grilled chicken, on-the-go salad cups, fruit-infused water and chocolate chip cookies.
