California Omelet

    Beat eggs with milk. Melt 1 tsp. butter in nonstick skillet over medium heat.

    Pour egg mixture into skillet and allow to set. Flip eggs over.

    To one half of the omelet, add 1/2 of the cheese and all of the tomato, mushroom, bacon bits, and spinach. Cook for 2 minutes, then fold in half.

    Top with rest of the cheese, Avocado and 1 Tbsp. of yogurt. Add salt and pepper to taste. Enjoy!
